where did you go?

sheez, this weekend went by too quick!
i wanted it to last longer.

saturday:

scrapped another a layout for the wedding album...








ran 3.01 miles in 30:36.
second time to be able to do a 3 in 30.
so proud of myself!

watched the movie Les Miserables with maiya.
omigosh...
that movie was so good!
i cried so many times.
ya gotta see it.

sunday:

blog surfed in a quiet home early in the a.m.
i love it when i have the house to myself around that time.
no interruptions.

phone conversation with my sis jo.
so happy that she & i are so close.
we can totally be honest with each other.
we can be stupid goofy with each other too.

mopped the floors and cleaned the bathrooms.
yuck-o on the bathrooms.
note one of my favez to do.
for some reason i enjoy mopping tho'.
here's another secret:
i love to vacuum too.
i find both seem to clear my mind.
plus work up a nice sweat.

pretty much chilled the rest of the day of blog surfing and posting.
i kinda like these lazy days at times.
no worries, just laziness.
love laziness.

weekends come back.
please.
i'm waiting....

ay yay yay ya...i love enchiladas...

one of my favez that i want to share...
and a special request from one of our daughters, ashley....

enchiladas....


pretty simple recipe....

preheat oven 325 to 375

2 Old El Paso enchilada sauces (mild)
a package of shredded mexican cheeses (2-3 cups)
medium size tortillas (8-10)
1 lb ground turkey
1 teaspoon ground cumin
1 tablespoon sugar (optional)


  • spread about 1/4 can of enchilada sauce on the bottom of baking dish.
  • brown ground turkey and drain any fat.  
  • add remaining 3/4 can of enchilada sauce, cumin and sugar to browned ground turkey.
  • heat thru about 5-10 minutes, stirring occasionally.
  • remove from heat and stir in 1/2 cup of shredded cheese.
  • spread about 1/4 cup ( i use my cooking spoon) in the middle of tortilla.
  • spread 1 Tablespoon of shredded cheese on top of meat & roll tortilla.
  • place rolled tortillas on top of sauce (the one you already spread) in the baking dish.
  • the meat sauce mix will make about 8-10 enchiladas.
  • spread other can of enchilada sauce over them (use all of it!).
  • sprinkle as much cheese as you desire on top.
  • bake for about 15-20 minutes or until cheese is melted and enchiladas are hot throughout.


and eat up!

(Note:  must use the old el paso brand. i've tried different brands but this one is the best, in my opinion)

did you know it's friday?

yup it is!
so happy happy joy joy for it.

what have i been up to since my last post?

i am missing all of us together...





i try to make sure we take a family portrait of some sorts when we are finally together.
the next time will be on ashley's spring break which is not until the end of march.
we are only "together" 3x a year, so we try to take a lot of advantage of that time.
so grateful for times like these.

maiya came home from WA last sunday night.
yey-yah!
love when she is home with us.



made korean beef (on the cheap) & rice.
i got the recipe from here.
omigosh!
so yumm-o!
everyone ate it up.

oh well.

selene had her follow-up appointment this past wednesday for her heart murmur.
and i'm proud to announce that the doc says she no longer has one.
yey-yah!


and i am finally getting into learning Photoshop.
i am starting to love this program.
i have to admit i was a bit intimidated by it.
that's why i put it off so long.
but after stalking ali edwards blog i'm stoked to learn.

and today...
i've got to do some form of exercise especially cardio.
i was planning to run this morning...
but it's real cold and a bit windy.
i don't want to drag selene out there.
so i may have to do some hip hop abs or run later this afternoon when maiya is home.
we'll see.

i am also gonna hit a chapter of photoshop.
then go thru the plastic box of memorabilia stuff for project life.
uploading my new photos.
getting my january photo-a-day posted.

it's gonna be a good friday.

i do....

okay i couldn't think of a better title.
but it's good enough for this post.

got a couple of layouts to share.
trying to get going on scrapping some page layouts to complete our wedding album for our 2nd ceremony.
it's about time after almost 4 years of marriage.
sheez!
betta late than neva.

i used some of my decor from our wedding that we were able to salvage for these.
then used scraps from my supplies.
i so love those rub-ons from creative imaginations and jenni bowlin.
love the prima stamps too.
why have i never used them before?
my plan for all the wedding layouts is to use whatever is in my scrap supply stash and any of the wedding decor.
so happy we saved a bunch of it.
now it wont got to waste.

gonna try to do one layout during this week or this coming weekend.

i am also in the works of gathering all my memorabilia for my project life 2012.
i was able to organize them by month and then by day.
i am gonna go thru another plastic box of stuff where receipts, biz cards, etc are in labeled envelopes.
i think i may have mixed 2012 stuff with older years.
hopefully it own't be too painful.

i have been surfing blogs on my daughter's kindle fire hd.
that thing is amazing.
right now i'm stalking tina azsmus.
she is a cool chick!
i love her blog.
love her currents, her posts, her layouts.
she is just darn cool.
wish i could meet her.

also got back into pinning.
i have not pinned anything in so long.
gonna get some recipe ideas.
because i'm running out of ideas.
so happy there's sites like this.

highlight for today:  ran 5.07 miles this morning.
with a baby jogger stroller.
pretty good huh?
i think so.

happy NYD 2013!!!!

she's feeling a lil bit better today.
starting the new year on a good note so far.
she was smiling and giggled too.
a good sign.


it must have been all the Mac & cheese & pineapple juice she had last Saturday night.
her tummy just couldn't take it because the next morning (12.30.12) about 5:30 she started puking up a storm of all that stuff.
ended up in the ER for 2 1/2 hours.
next day she puked once, had a slight fever.
pretty much slept the whole day.

she is doing really good today.
her old lil self.
running and shouting about all over the place!

i wanted to go for 4 but man i just ran out of energy.

on a scrapping note...
i have been on a roll since school vacay has been on...
i started doing the rest of the scrap layouts for our wedding album.
my goal is to finish is by the end of this year.
i'll be sharing the 2 i did the past couple of days soon.

also i have totally been contemplating becky higgin's project life challenge.
however, i know that i won't be able to start from a january 1 perspective of this year.
so i'm thinking of doing last year.
i just can't afford to do prints on a daily basis.
i only order prints when i can or when there is a major deal going on.
gotta gather all my souvenirs, receipts, memorabilia i've collected.
i have an album, actually 2 which don't match.
but that's ok.
for scrap supplies i'm gonna use old scrapbook kits.
gotta use them somehow, right?
i have been so inspired by ali edwards.
i went thru all her posts concerning project life2012 and now i'm onto 2011.
i love that woman.
her approach is so simple but so cool chic!
love her!
so grateful for peepz like her.
let's see how it goes for me.
